Vision and prophecy is the theme of this weeks Food of Thrones, an oddly coincidental theme as I spent a good chunk of my weekend reflecting on where I am in life at this moment, and how much I never saw this direction (predominately my obsession with boxing) coming. I began to wonder if I HAD known I was going to spend my weekends competing, would I have started earlier- or laughed at how ludicrous it sounded, and in turn avoided it? Luckily I don’t live in some Harry potter self-fulfilling prophecy novel, and I will never have to deal with this situation. But the theme is still relevant in terms of Game of Thrones….
And thus, this frozen berry smoothie are my vision and prophecy dedication to the white walkers who have continuously appeared in the seasons, and are a constant reminder of how little the games for the seven kingdoms are in comparison to their oncoming danger. They seem to march forward with a steady step that would challenge most horror movie villains, and I cannot wait to see the final clash between the living and dead. But while we wait… this smoothie is a pretty good comfort, and it helps it is tasty, looks goooood. Things to note are that the coconut cream is easily exchangeable for real cream if you prefer, it comfortably serves 2, and it is definitely a dish you need to prepare overnight. Enjoy. x
FROZEN BERRY SMOOTHIE

INGREDIENTS
1 banana
1 cup berries
2 cans of coconut milk
1/4 cup chia seeds
1 tsp vanilla essence

METHOD
1. Blend together a banana, and 1 cup coconut milk, and 1/2 cup berries and place in a plastic container overnight (or roughly 7-8 hours). This will make your smoothie base.
2. Next, add in a different mixing bowl 1/4 cup chia seeds and 1 can coconut milk, leaving in a bowl overnight in the fridge. This will make your chia layer.
3. Place a can of coconut cream in the fridge upside down overnight. This will make your coconut whip.
3. The next day, blend together 1/4 cup blueberries to make a puree. mix this with your chia layer. Then, take out your smoothie base, and re-blend it to make it a smoother consistency.
4. Take out the can of coconut cream, turning the right way up and spooning out the top layer of liquid- using only the bottom hardened layer. Blend this in a mixer, or using hand beaters for 3-5 minutes until it gets soft peaks, add in vanilla essence to taste.
5. Layer in a cup the cream, chia, and smoothie, and top with additional 1/4 cup of fresh berries.
NOTE: if you are not a fan of coconut whipped cream, you can use regular cream- noting it does make it a bit sweeter.
